Elote Mexican Street Corn

This recipe is for elote, or Mexican street corn. To make this dish, you will need to grill or roast corn on the cob until it is cooked and slightly charred. You will then brush the cooked corn with a mixture of mayonnaise, sour cream, and chili powder, and top it with cheese, cilantro, and a squeeze of lime juice. Elote is a popular street food in Mexico that is a delicious and flavorful way to enjoy corn on the cob.
Ingredients
- 4 Ears of corn
- ½ cup Mexican creama
- ¼ cup mayo
- 1 cup of Cotija cheese, crumbled
- All Purpose seasoning
- Garlic powder
- Tajin
- Juice and zest of 1 lime
- 1/4 cup of chopped cilantro (not a fan of cilantro so this step is optional)
- ½ teaspoon of chipotle chili powder or paprika
Instructions
- Boil corn in a pot of water with a pinch of salt and 1 juice from one lime.
- In a bowl add mayo, creama, AP seasoning, garlic powder, lemon zest and tajin. (I like my sauce a little sweet, so I added ½ tsp sugar which is optional)
- Drain corn and drizzle with sauce and cotija cheese and chili powder or tajin on top.
- Serve and enjoy!
For this recipe I boiled my corn, but this can be done on the grill
