This recipe is for shrimp with avocado salsa plantain cups. To make this dish, you will need to fry plantain slices in a bit of oil until they are crispy and golden brown. You will then stuff the plantain cups with a mixture of cooked shrimp and avocado salsa, which is made by mixing diced avocados, tomatoes, onions, cilantro, lime juice, and other ingredients. Ingredients
- 2 ripe plantains
- ½ red onion
- 1 Roma tomato dices
- 1 Avocado
- ½ Lime Juice
- 7 oz of Raw Peeled & Deveined Shrimp
- 2 tbsp butter
- 3Tbsp olive oil
- 2Tbsp Tony Chachere's Creole Seasoning, Original
- 2tbsp Morton Nature’s Seasons Seasoning Blend
- 1 tbsp paprika
Instructions
- Prepare avocado salsa by adding the diced avocado, tomatoes and chopped red
onions into a bowl mix and add the juice from the lime then mix. Place into the
refrigerator until ready. - Peel plantain and cut in thirds.
- Deep fry your plantain in oil until golden brown. Do not throw away the oil when
done. - Using a Lemon squeezer place plantain in the center then press to make a cup.
- This is where you will reuse your oil to refry your plantain a second time for about 2-3 mins. Remove from oil and drain.
- Season shrimp with creole, nature and paprika seasoning
- In a skillet add oil and butter. Place shrimp in hot skillet and cook. Rotate your shrimp to cook on both sided evenly. Remove from pan when cooked and drain on a
paper towel. - Assemble your cups by placing the avocado salsa at the bottom and 2-3 pieces of
shrimp on top. - Enjoy.
