Summer Griddle Chicken Salad With Avocado Dressing
This recipe is for a summer griddle chicken salad with avocado dressing. The griddle chicken is cooked on a stovetop griddle pan, and the avocado dressing is made by blending avocados, lemon juice, and other ingredients. The cooked chicken and dressing are then served over a bed of mixed greens or other salad ingredients.
Ingredients
Salad
- 2 romaine hearts, chopped
- 2 Roma tomatoes chopped
- ½ Bell peppers (red, yellow, green)
- 1/2 cucumber chopped
- ½ cup whole kernel corn
- ½ Avocado pitted and diced
- 2 chicken breast fillets
Dressing
- ¼ cup avocado oil
- ½ tsp salt
- ½ teaspoon black pepper
- ½ tsp Garlic powder
- 1 avocado peeled, pitted and cut in half
- Juice of one lime
Grilled chicken
- 1tsp Morton’s Natures Seasons
- ½ tsp adobo
- ½ tsp parsley flakes
- ½ tsp garlic powder
Instructions
- In a blender or Nutri bullet combine all ingredients avocado oil, salt, black pepper, garlic
powder avocado and lime. Blend to a smooth consistency. - Set dressing aside or place in the refrigerator.
- Season chicken and grill. If you do not have a grill cube chicken and pan sire with 1 tbsp oil,
and 2tbsp of butter until cooked. - Place lettuce a large bowl. Keeping each vegetable separated arrange the vegetables in piles
on top of the lettuce. - Drizzle desired amount of dressing over the salad. Toss salad and serve
