Plantain with Ground Chicken Cups
Ingredients
- 4 ripe plantains
- 1 pack ground chicken
- Bell peppers
- ½ onion
- 4 eggs
- ½ cups shredded cheese
Instructions
- Slice plantain whole and fry until both sides are cooked. Set aside.
- In a sauce pan heat oil then sauté bell peppers (use as much or as little as you like) and onions.
Then add ground chicken. Season with Ap seasoning, garlic powder and onion powered (measure with your heart). - Pre heat oven to 350. Spray muffin tin with cooking spray then place plantain into muffin tin to
make a cup. Beat eggs and add one tablespoon to the bottom of muffin tin. Add ground
chicken, top with shredded cheese and 1-2 tablespoons of beaten eggs. Repeat step for each cup. - Bake at 350 for 20 or until done.
