Broccoli Cheddar Soup

Soup is life, something I will always say. My love for soup is crazy and I love it. If you ask any Jamaican what was for dinner on a Saturday they will all tell you the same answer, "Soup". I honestly think this is were my obsession came from. This one pot meal is filling and flavorful at the same time. Perfect for those cold winter days.
Ingredients
- 2 Bags broccoli florets
- 4 -5 carrots shredded
- 1/2 cup melted butter
- 1/2 cup flour
- 1 chopped onion
- 2 cup sharp cheddar
- 1 cup half-and-half
- 1 cup heavy cream
- 1 cup water
- 2 tbsp better than bullion
- garlic powder
- onion powder
- all purpose seasoning
Instructions
- In a Dutch oven melt butter then add onions, sauté then add flour.
- Whisk together making sure all lumps are gone. Add milk and water, keep whisking to ensure that the liquid is free of lumps.
- Add better than bullion and cover to bring to a boil. Add broccoli florets , cheese, garlic powder, onion powder and all purpose seasoning.
- Measure with your heart for the powdered seasoning.
- Let cook for 30 to 35 mins or until thicken.
- Taste and add more seasoning as needed.
- Serve and enjoy.
