Chantelle`s Shepherd`s Pie

In high school I loved going to my food and nutrition class. I think it was the only class I enjoyed. Here is where I learned how to make shepherds pie. But over the years I have tweaked it and made it my own. This one pot meat and potato dish is packed with flavor that everyone will enjoy.
Ingredients
- 1lb lean ground beef
- 1 1/2 lbs yellow potatoes
- 1 cup chopped onions
- 1 cup sweet peppers
- 1 tsp garlic powder
- 2 tsp all purpose seasoning
- 1 tsp sugar (optional)
- 1tsp Adobo
- 2 tsp tomato paste
- Garlic butter
- Milk
- 1 bag frozen peas and carrots
- 1 bag frozen corn
Instructions
- Peel potatoes, dice them and place on the stove to boil, Make sure you add a bit of salt to the water and it is covering the potatoes.
- In a sauce pan add olive oil and sauté onion and peppers
- Add ground beef, garlic powder, adobo and all purpose seasoning.
- Cook for about 15 mins. Add tomato paste, peas, carrots and corn.
- Cover and cook for another ten mins.
- Remove potatoes from stove and drain in a bowl mash potatoes with garlic butter and milk.
- Add more butter and milk to make it smooth. I added garlic powder, adobo and all purpose seasoning to my mashed potatoes to give it some flavor.
- Grease dish with butter. At this step you may add ground beef to the bottom them top with mashed potatoes. But I love to layer my pie.
- Layer Pie: Start off by covering the bottom of your dish with mashed potatoes, then add ground beef and so on.
- Bake for 30 mins at a temperature of 375 degrees.
- Remove from the oven and let cool
- Serve and Enjoy!
