A delicious gluten-free banana bread recipe that is perfect for breakfast or as a snack.

Ingredients

  • 2 cups gluten-free flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • "1 cup granulated sugar
  • "2 large eggs
  • 3 ripe bananas, mashed
  • 1/2 cup plain Greek yogurt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F. Grease a 9x5 inch loaf pan with cooking spray.
  2. In a medium bowl, whisk together the gluten-free flour, baking soda, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the mashed bananas, Greek yogurt, and vanilla extract.
  4. Gradually stir in the dry ingredients until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.
