A delicious gluten-free banana bread recipe that is perfect for breakfast or as a snack.
Ingredients
- 2 cups gluten-free flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- "1 cup granulated sugar
- "2 large eggs
- 3 ripe bananas, mashed
- 1/2 cup plain Greek yogurt
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F. Grease a 9x5 inch loaf pan with cooking spray.
- In a medium bowl, whisk together the gluten-free flour, baking soda, and salt.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the mashed bananas, Greek yogurt, and vanilla extract.
- Gradually stir in the dry ingredients until just combined.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.
