Veggie Italian Pasta

Perfect side for brunch or dinner.

Ingredients

  • 1 box penne pasta
  • 1 bottle Italian dressing from Aldi
  • 1 seedless cucumber
  • Roma tomatoes
  • Red, green, yellow, orange peppers
  • Red onion
  • 1 cup fresh parmesan cheese shredded

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook until al dente.
  3. Drain, rinse with cool water, then drain well and transfer to a large bowl.
  4. Set the pasta aside to cool while you prepare the ingredients, stirring the pasta occasionally to keep it from sticking together.
  5. Chop peppers and onions', slice tomatoes in half and slice cucumbers.
  6. Add all ingredients together and mix. Add a half bottle more dressing if needed.
  7. Refrigerate until ready to serve
  8. Enjoy
