Vegetable Egg Muffins

Ingredients

  • 12 eggs
  • 1 cup shredded cheddar cheese
  • 1 cup chopped onion
  • 1 cup assorted bell peppers
  • 1 cup chopped spinach
  • All purpose seasoning ( salt and pepper can be substituted for all purpose seasoning) measure with your heart

Instructions

    1. Pre heat oven to 350 degrees and grease standard muffin tray.
    2. Whisk eggs and AP seasoning or salt and pepper.
    3. Pour half cup of egg mix into muffin tin then add peppers, onions and spinach. Top with cheese
    4. Bake for 25-30 minutes or until top are set.
      Remove from oven.
    5. Enjoy!
