
Jamaican Saltfish Fritters
Saltfish fritters is a delicious Jamaican Appetizer that is packed with different flavors. This simple dish can be eaten for breakfast, lunch, dinner or even a snack. Also known as stamp and go this flavorful treat is one that will become a favorite in no time. I enjoy having mine with some steamed Callaloo or Ackee and saltfish
Ingredients
- 1 pack of salted codfish (boneless)
- 1/2 cup onion
- 1/4 cup chopped tomatoes
- 1/4 cup chopped scallion
- 1 sprig of fresh thyme
- 1/2 habanero pepper without seed (optional)
- 2 cups flour
- baking powder 1tsp
- 1 tsp Adobo
- 2 tsp Natures Promise Seasoning
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 2 cups water"
Instructions
1. Soak saltfish for 24hrs changing the water twice.
2. Boil saltfish for about 10 mins. While boiling your saltfish prep your seasonings by chopping onion, scallion and thyme and set aside.
3. In a large bowl add flour, baking powder , adobo, all purpose seasoning, garlic powder and onion powder. Add water a bit at a time. You do not want a runny batter, if batter is too liquified add a bit more flour. You are looking for a thick consistency.
4.Remove saltfish from the stove and run under cold water. Shred saltfish with your fingers and gently fold into the batter
5. Heat a frying pan with oil and keep on medium to low heat.
6. Add a spoonful of batter to the pan but do not overcrowd the pan. Fry for about 4-5 mins on each side or until golden brown.
7. When done remove from pan and set aside on a a piece of paper towel to drain excess oil.
8. Enjoy by itself or with your favorite side.
